Tasting notes

Strong floral notes on the nose intermingle with raspberry, cherry, and the distinct sandy earth tones that give away the soil in which they were grown. Playful red fruit entices you throughout this wine that is lighter in body then other Watermill wines but no less enjoyable. A dash of Petite Sirah and Petit Verdot gives this wine some backbone with the finish. This Carménère is a wine meant to be enjoyed with lighter fair and less ageing.

Production notes

All Watermill wines are hand picked late in seasons for maximum ripeness. They are then gently pressed in small volumes and undergo inoculated fermentation in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs and pump overs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.

Other notes

A new varietal for Watermill, the Carménère is a trial exercise in what is varietally possible within the Walla Walla Valley. Carménère is often referred to as South American Merlot, and Watermill makes Carménère in the ancient Bordeaux style that highlights the playful nature of the varietal and provides for a distinct flavor profile that is unique in the Watermill lineup.
