Tasting notes

This Syrah draws interest by its dense rose petal red hue, and its abundant aromas of spicy clove, tart black currants, and underlying earthy tones. This full bodied wine develops into a palate rich in structure that leads into a lingering bramble berry finish. Our Praying Mantis Syrah celebrates the intrinsic connection between man and nature through our eco-friendly and sustainable farming practices.

Production notes

All Watermill wines are hand picked late in seasons for maximum ripeness. They are then gently pressed in small volumes and undergo inoculated fermentation in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs and pump overs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.

Syrah from the Rocks District of Milton-Freewater is perhaps the rising star is our bountiful valley. The exposed cobblestones of these stunning vineyards provide amble radiant heat during the day to develop rich, inky, silky textured wines, while still retaining the savory components that make Syrah special.
