We at Watermill have spent our lives searching for truth in wine. Hallowed Stones is the culmination of our multi-generational efforts to create the purest expressions of terroir and to let our estate fruit tell the story of the rocky soils on which it is grown. The Rocks District of Milton-Freewater is unique in the winegrowing world. Vines are planted directly into the rocky soils and the grapes hang nearly to the ground in order to maximize their exposure to the solar radiation provided by the river stones, and to absorb minerality through the roots that weave through the rocks. The combination of these factors creates a wine that cannot be replicated. With unparallel minerality, complexity, and funk, wines grown in the Rocks District of Milton-Freewater present a sense of place and a flavor unlike anywhere else in the world.

“This Syrah opens with a nose so funky it can only be from The Rocks District. Smells of leather, bacon, and smoke emanate from the glass and flow into the mouth. Rich dark fruit notes of plumb and blueberry course through the front and back pallet and a refined tannin structure make this wine unusual in that it is both drinkable young and incredibly age worthy."

Production notes

Hallowed Stones wines are hand picked in the middle of the season for optimal ripness and approachable alcohol. They are then gently pressed in small volumes and undergo inoculated co fermentation with Viognier in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.

"2017 Watermill “Hallowed Stones” Estate Syrah, The Rocks District of Milton-Freewater ($40)
Deep purplish ruby colored, this Syrah emits seductive aromas of wild blackberries, mountain blueberries, black currants, crushed black roses, sweet tobacco, lavender, olive tapenade, violets and spiced incense. The youthful flavors, as well, are alluring, with delicious black and blue fruits that are infused with licorice, cocoa, French roast and evident but unobtrusive Rocks funk. On the back, the wine turns chewy textured, with sensations of roasted berries and sweet nuts, crème de cassis and charcoal followed by a moderate alcohol (13.7%) spiced smooth tannin finish. 19/20 points."
