The Hallowed Stones wines are the culmination of our multi-generational efforts to create the purest expressions of terroir and to let our estate fruit tell the story of the rocky soils on which it is grown. The Rocks District of Milton-Freewater is unique in the winegrowing world -  vines are planted directly into the rocky soils and the grapes hang nearly to the ground in order to maximize their exposure to the solar radiation provided by the river stones, and to absorb minerality through the roots that weave through the rocks. Our Cabernet Franc showcases the stony flavors of the Rocks District alonside fresh and pure flavors of raspberries and just a touch of cured meats.

"The Cabernet Franc is a contradictory exercise in the feminine nature of this grape. Beautiful floral notes dominate the nose and the body of the wine is one of supple red and blue fruit with a taunt finesse that runs into a touch of finishing green bell pepper.”

Production notes

Hallowed Stones wines are hand picked in the middle of the season for optimal ripness and approachable alcohol. They are then gently pressed in small volumes and undergo inoculated fermentation in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.

2017 Hallowed Stones Cabernet Franc; Watermill Estate (all their vines) planted 2003. Aged in 25% new French and American oak barrels. Solid color. Loire style—gamy, fresh raspberry, vibrant and fresh, fine ferrous finish with soft tannins. Shows definite Rocks District graphite and saline notes as well. Very good for this style. 13.9% 91pts

"2017 Watermill “Hallowed Stones” Estate Cabernet Franc, The Rocks District of Milton-Freewater ($40)
Semi opaque ruby colored, this wine possesses a rich, smoky nose of raspberry, cherry and plum with scents of black roses, mulberry, pipe tobacco, rosemary, sage and smoldering incense. The medium full bodied flavors mirror the aromatics with layers of red fruits that are underlain with licorice, cocoa, French roast and Rocks cobblestone and silt minerals. The back reveals roasted berries and grilled nuts, framboise and kirsch liqueurs, plum preserves, mixed spices (coriander, cardamom, nutmeg) and herbs on the rich, grainy yet smooth ripe tannin finish. 19/20 points."
