2019 Hallowed Stones Cabernet Franc
The Hallowed Stones wines are the culmination of our multi-generational efforts to create the purest expressions of terroir and to let our estate fruit tell the story of the rocky soils on which it is grown. The Rocks District of Milton-Freewater is unique in the winegrowing world - vines are planted directly into the rocky soils and the grapes hang nearly to the ground in order to maximize their exposure to the solar radiation provided by the river stones, and to absorb minerality through the roots that weave through the rocks. Our Cabernet Franc showcases the stony flavors of the Rocks District alongside fresh and pure flavors of raspberries and just a touch of cured meats.

On the nose a touch of rose petal and ancho chilies give an herbal and floral twist to the proceeding. For a wine from the Rocks District it retains a cheerful brightness on the finish. Hallowed Stones wines are hand picked in the middle of the season for optimal ripness and approachable alcohol. They are then gently pressed in small volumes and undergo inoculated fermentation in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.
