The 2021 Hallowed Stones Cabernet Sauvignon comes from estate vineyards rooted in the iconic cobblestone soils of the Rocks District of Milton-Freewater. This unique AVA is unlike any other—vines are planted directly into ancient river stones, and grape clusters hang close to the ground, absorbing heat radiated from the rocks. This distinctive terroir imparts deep minerality, expressive aromatics, and savory complexity to the fruit, creating a wine that genuinely reflects the land.
Production
Made from 100% estate-grown Cabernet Sauvignon, this small-production wine was aged 18 months in 50% new French oak, lending structure and integrated spice. The Fermentation and élevage are carefully managed to preserve the purity of the fruit while enhancing the wine’s natural complexity. The 2021 vintage saw optimal ripening conditions, resulting in a powerful and polished wine.
Tasting Notes
This Cabernet opens with layered aromatics of ripe cranberry, smoky vanilla, and dark cherry. The palate is equally expressive, with dark plum and blackberry flavors unfolding alongside nuances of milk chocolate, tobacco leaf, mineral notes, and a touch of nutmeg. Balanced acidity and well-integrated tannins give this wine both power and finesse. The finish is long and mouthcoating, showcasing the complexity and structure that define the best of the Rocks District.
