2020 Estate Cabernet Sauvignon
Vineyard Notes
The grapes for this Cabernet Sauvignon are sourced from Watermill's premier Bordeaux-producing vineyards, high in the foothills of the Blue Mountains in the south end of the Walla Walla Valley. This includes 50% from McClellan Vineyard, 43% from Anna Marie Vineyard, and 7% from Hallowed Stones Vineyard. The unique terroir of sandy loam and "Freewater" cobble, combined with hot days and cool fall nights, provides ideal conditions for producing exceptional red wines.
Harvest and Production
The 2020 vintage benefited from optimal weather conditions, allowing the grapes to develop full, rich flavors. The grapes were hand-harvested in late September, sorted, and gently crushed. Fermentation took place in stainless steel tanks, followed by aging for 20 months in 35% new French Oak from premium coopers to enhance complexity and integrate tannins.
