This 2020 Cabernet Sauvignon is crafted from Watermill’s premier Bordeaux-varietal vineyards in the Walla Walla Valley, including 50% McClellan Vineyard, 43% Anna Marie Vineyard, and 7% Hallowed Stones Vineyard. Nestled in the foothills of the Blue Mountains, these vineyards feature a mix of sandy loam soils and “Freewater” cobble, delivering excellent drainage and mineral character. Warm days promote full ripening, while cool fall nights help preserve acidity, creating wines of balance, power, and elegance.
Production
The 2020 vintage enjoyed ideal growing conditions, allowing for full flavor development and polished tannins. Grapes were hand-harvested in late September, carefully sorted, and gently crushed. Fermentation occurred in stainless steel tanks to preserve vibrant fruit character, followed by 20 months of aging in 35% new French oak from premium coopers. This patient aging process enhances complexity and delivers a smooth, integrated finish.
Tasting Notes
This Cabernet Sauvignon opens with expressive aromas of blackberry jam and creamy caramel, accented by subtle hints of graphite and charcoal. On the palate, lush black currants and juicy blackberries lead into a mouth-coating texture supported by refined, structured tannins. The finish is impressively long and smooth, lingering for over a minute.
