Production Notes
Aged in 42% new oak (30% American and 14% French), this wine reflects a careful balance between oak influence and the preservation of its fresh fruit characteristics. The fermentation process was meticulously controlled to enhance its vibrant aromas and flavors, resulting in a harmonious and well-rounded profile.
Tasting Notes
Bright and inviting, this wine opens with aromas of fresh raspberries and a touch of dried thyme, complemented by a subtle kiss of vanilla. On the palate, the red fruit flavors remain vibrant, supported by soft tannins and a smooth texture. The oak influence adds depth and complexity without overpowering the wine’s natural freshness. A refined and versatile wine, perfect for pairing with a variety of dishes or enjoying on its own.
All Watermill wines are hand picked late in seasons for maximum ripeness. They are then gently pressed in small volumes and undergo inoculated fermentation in 1 to 1.5 ton small lot fermenters. The wine sits on the skins for more than two weeks where it undergoes additional maceration through punch downs and pump overs for color and tannin integration before being transferred to barrel. All reds age for between 12 and 16 months in a combination of new and neutral medium toast French and American oak before bottling.
