Fermentation and Aging
Chance R was fermented in stainless steel for an extended cold ferment and gently racked before being inoculated for malolactic fermentation 65 days after harvest. This process preserves the wine's amazing freshness and adds a hint of sweetness. The wine did not spend any time in barrels and was tank-aged for a year. Sourced from a cold site in the Walla Walla Valley at Cockburn Ranch, the fruit complexities linger on the palate, leaving you asking for more.
